The closer I get to the book launch, World Fantasy Con, and the Scotland and Iceland trip, the harder it is to keep up with…well, anything. So this is really just a short one to say, hi, I am alive and happy. To tide you over, here is one of the foods of my people, Glorified Rice, that staple of Lutheran church potlucks of yore.
- 1 box, lemon Jell-O
- 1c. boiling water
- 1c. crushed pineapple, drained
- 2c., boiled rice (dry)
- 1 c. cream
- 4T. sugar
- salt to taste
Dissolve Jell-O in water. When cool and thick, whip to the consistency of heavy cream. Add remaining ingredients. Pour into mold and allow to set. Unmold on serving plate with lettuce, and whipped cream and maraschino cherry as garnish.
I mean, it’s not fish aspic, but I’m not a complete monster.
